Ushtiptsy

Uštipci are Serbian cutlets, but not quite ordinary ones.

You will need: 250 g minced pork, 50 g bacon, 50 g hard cheese, 1 chili pepper, 1 clove garlic, 1 tsp. paprika, spices.

Preparation: Cut the cheese and bacon into small cubes, chop the chili and garlic, and mix everything with the minced pork and spices. Leave the minced meat in the refrigerator for half an hour, form into cutlets and fry them on both sides in a frying pan.

Prebranac

Baked beans with sausages are tasty and filling.

You will need: 300 g of white beans, 700 g of onion, 4 cloves of garlic, 200 g of hunting sausages, 4 tomatoes, 1 bell pepper, 1 tsp. paprika, spices.

Preparation: Soak the beans overnight in advance and boil until tender. Cut the onion into half rings and the garlic into slices, and fry them until soft. Mix with spices. Place half the beans in the pan, a layer of onions, and repeat the layers. Place sliced ​​sausages and striped peppers on top. Pour in the tomatoes chopped in a blender and place everything in the oven for 1 hour at 180 degrees.

Serbian Koch

This pastry is reminiscent of our traditional manna, only even more tender.

You will need: 3 eggs, 2 tbsp. semolina, 2 tbsp. flour, 4.5 tbsp. sugar, 0.5 tsp. baking powder, 250 ml milk, 1 pinch of vanillin.

Preparation: Beat egg whites and 3 tbsp to stiff peaks. Sahara. Add the yolks one by one, continuing to beat. Then carefully stir in the sifted flour with baking powder, and finally the semolina. Place the dough in the mold and bake the koh for half an hour in the oven at 180 degrees. Cut the hot pie into pieces and pour boiling milk with the remaining sugar and vanilla.

Vanilice

Original Serbian cookies made with pork fat.

You will need: 250 g pork fat, 100 ml yogurt, 10 g vanilla sugar, 5 tbsp. powdered sugar, 2.5-3 cups flour, 100 g jam to taste.

Preparation: Mix soft pork fat with powdered sugar, yogurt and vanilla sugar. Gradually add flour, knead the dough, roll it out and cut into small circles. Bake them on parchment for 10 minutes in the oven at 200 degrees, let cool, brush with jam and combine in pairs.

Pasul

Pasul is a thick vegetable soup with beans. Delicious!

You will need: 250 g of white beans, 2-2.5 liters of water, 1 onion, 1 carrot, 1 bell pepper, 2 cloves of garlic, 200 g of hunting sausages, 1 tbsp. paprika, spices.

Preparation: Soak the beans in advance and boil until tender. Add to it an onion and carrot cut in half, a pepper cut into quarters and garlic. Cook everything until soft over medium heat. Place the vegetables in a blender, add a glass of liquid and puree. During this time, add chopped sausages to the beans. Add puree and spices there, and simmer the soup for another 15 minutes over low heat.

Chicken paprikash

Well, how can you resist stewed chicken, and even with a side dish!

You will need: 1 kg of chicken, 3 onions, 1 liter of broth, 2 eggs, 150 g of flour, 1 tbsp. paprika, spices.

Preparation: Finely chop the onion and fry until golden. Cut the chicken into pieces and fry on all sides, and then season. Send the chicken to the onion, add paprika and other spices to taste, add broth or water, and simmer for 20 minutes over medium heat. Mix the eggs and flour into a smooth dough and spoon the dumplings directly into the boiling paprikash. Boil for another 7-10 minutes.

Zelyanitsa

Delicious puff pastry pie with herbs.

You will need: 1 package of puff pastry, 1 egg, 200 g feta, 1 bunch of dill, 1 bunch of basil, 1 bunch of green onions, 1-2 handfuls of olives, spices.

Preparation: Chop all the greens, onions and olives, mix with crumbled feta and season. Cut the rolled out dough into long strips, lay out the filling and roll into tight sausages. Wrap these sausages in a snail. Brush the greens with beaten egg and bake in the oven for 30-40 minutes at 180 degrees.

Leskovachka muchkalitsa

Stewed pork with vegetables in the best traditions of Serbian cuisine.

You will need: 700 g pork, 1 onion, 2 bell peppers, 2-3 tomatoes, 3 cloves of garlic, 1 tsp. paprika, spices.

Preparation: Coarsely chop the pork, cut the onion into half rings, and the pepper into strips. Remove the skin from the tomatoes and finely chop. Fry the meat until golden brown. Separately, fry the onion until golden, add pepper and fry for another 5 minutes. Then add spices, tomatoes and chopped garlic. Add pork there, pour in a little water and simmer everything under the lid for about 40 minutes.

Salad with fresh champignons

This salad is very popular in different regions of Serbia.

You will need: 2 bunches of parsley, 2 lemons, 500 g of champignons, 4 cloves of garlic, 80 g of cheese to taste, olive oil, spices.

Preparation: Cut the champignons into halves, sprinkle with the juice of 1 lemon, leave for 10 minutes and drain off excess liquid. Mix mushrooms with chopped herbs and garlic, add grated cheese. Separately, whisk the olive oil, spices and juice of the second lemon, and season the salad.

Cevapchichi

The peculiarity of fried Serbian sausages is that they are prepared from minced meat.

You will need: 300 g beef, 200 g pork, 1 onion, 2 cloves garlic, 1 tsp each. paprika, basil, oregano and mustard.

Preparation: Finely chop all the meat, onion and garlic, add spices with mustard, and beat the minced meat. Form small sausages with your hands or using the cut off neck of a plastic bottle. Fry the cevapchichi in a frying pan on all sides.

Butchers with nuts

These are classic pancakes, only with nut filling.

You will need: 120 ml of water, 120 ml of milk, 150 g of flour, 3 eggs, 1 pinch each of salt and sugar, 200 g of cottage cheese, 1 cup of walnuts, 2 tbsp. sesame seeds, 5 tbsp. powdered sugar.

Preparation: Whisk milk, water and eggs. Add salt, sugar and flour, mix the batter and fry the pancakes on both sides. Grind the nuts in a blender, add all the remaining ingredients, and grind again. Wrap this filling in pancakes.

Podvarak

There are different variations of this Serbian dish. We offer a recipe with turkey!

You will need: 1 turkey drumstick, 400 g cabbage, 130 g onions, 80 g carrots, 150 g bell pepper, 180 g tomatoes, 60 g celery root, 1 tbsp. paprika, 2 cloves of garlic, spices, mustard.

Preparation: Make cuts on the drumstick, insert pieces of garlic there, and rub it with spices and mustard. Roughly chop all the vegetables, mix with spices and place in a baking dish. Place the drumstick on top and drizzle with oil. Pour water up to the middle of the mold and bake the podvarak for 2 hours at 180 degrees in the oven.

Dzhuvech

Baked lamb with vegetables and pumpkin that will not leave anyone indifferent.

You will need: 500 g lamb, 700 g tomatoes, 3 onions, 3 tbsp. rice, 1 eggplant, 200 g pumpkin, 2 bell peppers, 1 bunch of parsley, 1 bunch of celery.

Preparation: Chop the tomatoes. Separately, chop all the other vegetables and herbs, add spices and a couple of tablespoons of oil to them, and leave for 15 minutes. Place tomatoes, half the vegetable mixture and chopped lamb in a baking dish. Sprinkle with washed rice and lay out the rest of the vegetables. Fill everything with oil from the vegetables, pour in 2 glasses of water and cook the juvech in the oven for 2 hours at 150 degrees.

Urnebes from feta cheese

Something between a salad and an appetizer, traditionally with paprika.

You will need: 250 g of cheese, 1 bell pepper, 3 cloves of garlic, 2 tsp. paprika, hot pepper, spices.

Preparation: Fry or bake the pepper until charred in any convenient way, peel and finely chop. Chop the garlic in the same way, mash the cheese, and mix everything. Season the urnebes to taste.

Serbian Sarma

An interesting version of cabbage rolls – especially for the holiday table.

You will need: 1 head of cabbage, 1 kg of sauerkraut, 500 g of minced pork and chicken, 6 smoked pork ribs, 2 onions, 1 cup of rice, 800 g of tomato sauce, spices.

Preparation: Boil a whole head of cabbage for 5-7 minutes in boiling water and cut off the leaves at the base. Remove any tough ribs from the leaves. Finely chop the onion, rinse the rice, and mix everything with spices, two types of minced meat and 100 ml of water. Beat the minced meat and wrap some of the filling in cabbage leaves, like regular cabbage rolls.

Squeeze the sauerkraut and place in a baking dish. Place cabbage rolls on it, and pork ribs between them. Cover everything with the top hard leaves of cabbage, pour in tomato sauce and 200 ml of water, cover with foil and bake in the oven for 1 hour at 180 degrees and then another hour at 160.

Chorba

A bright, hearty and aromatic soup that is famous among all Balkan peoples.

You will need: 500 g of beef, 2 potatoes, 1 carrot, 150 g of green beans, 1 onion, 300 g of cabbage, 2 tomatoes, 1 bell pepper, 2 cloves of garlic, 1 bunch of herbs, 1 tbsp. paprika, spices, 2 liters of water.

Preparation: Pour water over the beef, add spices for the broth and boil for about 1.5 hours until cooked. Remove the meat, cut it and return it back to the broth. Coarsely chop the carrots, potatoes and green beans and place in a saucepan. Cook for 15 minutes.

Finely chop the onion and tomatoes and simmer everything until it becomes a porridge. Add chopped peppers and shredded cabbage to the soup, and after 10 minutes add the roast and spices. Cook the chorba for another 7 minutes, add chopped herbs and garlic, remove from heat and let it brew under the lid.

Pogača with cheese

Airy bread with cheese filling, incredibly popular in the Balkans.

You will need: 350 g flour, 1 egg, 200 ml milk, 1 tsp. dry yeast, 2 tsp. sugar, 1 pinch of salt, 20 g butter, 1 egg yolk, 350 g feta cheese, 1 bunch of herbs.

Preparation: Mix warm milk, yeast, sugar and salt. Add the egg and melted butter, mix again and gradually add the sifted flour. Knead the dough, leave it warm for half an hour, then divide it into 6 parts and roll it out.

Mix crumbled cheese and chopped herbs. Place a layer of dough in the mold, sprinkle with feta cheese, cover with the next layer – and so on until the end. Brush the pogacha with yolk and bake in the oven for 40 minutes at 180 degrees.

Serbian pickled peppers

Not only Korean cuisine is rich in pickled vegetables!

You will need: 15 bell peppers, 5 cloves of garlic, 100 ml olive oil, 100 ml wine vinegar, 2 tbsp. Sahara.

Preparation: Place the peppers on a wire rack and bake in the oven until charred at 200 degrees. Place it in a bag for 10 minutes, peel off the skin and remove the seeds. Mix olive oil, vinegar, sugar and crushed garlic, pour over the pepper and let it brew for at least an hour.

Serbian burek with minced meat

Similar pies are also popular in Greece, Turkey and Cyprus.

You will need: 3 cups of flour, 300 ml of water, 4 pinches of salt, 200 g of minced meat, 1 onion, 3 cloves of garlic, 150 g of Adyghe cheese or feta cheese, spices and herbs.

Preparation: Knead the dough from flour, salt and water, and leave for half an hour. Divide it into 4 parts, roll it into flat cakes and leave for another half hour. Mix minced meat, chopped onion, garlic, spices and herbs. Roll out and stretch the cake until almost transparent, fold it into an envelope.

Exactly the same way stretch the second cake, and place the previous envelope on it – this is the bottom of the pie. Then put half of the minced meat, and grated cheese on it. Wrap everything in an envelope again, and repeat the previous step with the third cake. Wrap the beetroot in the last rolled out flat cake without filling, grease with butter and bake for half an hour at 200 degrees.

Proya

Proja is not just corn bread, but one of the symbols of Serbian cuisine.

You will need: 1 glass of flour, 1 glass of corn grits, 1 glass of milk, 3 eggs, 300 g of cheese, 150 ml of vegetable oil, 10 g of baking powder.

Preparation: Beat the milk with corn grits in a blender and leave for half an hour. Add eggs, butter, crumbled cheese and flour with baking powder. Knead the dough, pour into a mold on parchment and bake for half an hour at 180 degrees in the oven.
